3. He has taken a bite out of his sandwich and also from his tea cup it seems (a sign of madness):

This bite evidently refers to chikin. The cup sign (È) refers to the bottom half of the sky and the sandwich probably to the earth we live on (which feeds us). The Mad Hatter does not belong in spring, because then the sky is high above (Ç).

The form of the sandwich is in general the same as that of the ka sign above the head in this statue (picture from Wilkinson of course):

We can guess the 5 + 5 ka fingers stretched straight up refer to the time when Sun is present. The bite mark in the sandwich in the hand of the Mad Hatter hints Sun is no longer present, the Sun King's head has been swallowed.
